Chocolate Fudge
Are you a self confessed chocoholic? If you can’t stay off the sweet stuff try this healthier alternative that is higher in health giving fats but low on sugar. This is one of those rare foods that is good for you yet tastes amazing. Make a batch and keep it in the fridge for those moments of chocolate desperation.
Ingredients
- 3/4 cup of coconut milk
- 1 heaped tablespoon of almond butter
- 1 tablespoon of coconut oil
- 1 150g bar of organic dark cooking chocolate (over 75% cocoa solids)
- 1 teaspoon of honey
- 1/4 cup of chopped nuts
- 1/4 cup of pumpkin and sunflower seeds
- 1/4 cup of raisins
- 1/4 cup of grated coconut
Directions
- Break up the chocolate and melt it into the coconut milk on a medium to low heat.
- Add in the coconut oil, almond butter and honey and stir until smooth.
- Mix in the nuts, seeds, raisins and coconut.
- Pour into a grease proof paper lined dish to cool and then transfer to the fridge and leave to set for 3 hours.
- Cut into bite size squares and enjoy. One square per day is enough to get you through those craving windows.
