Indian Vegetable Soup
This veggie soup has a flavoursome twist with added spices. It contains chickpeas making it a little more filling due to the plant protein. If you are a curry fan, you will love this.
Ingredients
- 1 glug of olive oil
- 1 large chopped onion
- 2 cm piece of grated root ginger
- 1 finely chopped
- 1 tbsp garam masala
- 1 tsp cumin
- 850ml vegetable stock
- 2 large sliced carrots
- 1 tin chickpeas drained
- 100g chopped green beans
- Salt & pepper to taste
- Fresh or ground coriander to garnish
Directions
- Heat the oil in a pan and fry the onion, ginger and garlic along with the garam masala and cumin for approx 3 mins.
- Add the the stock, carrots and chickpeas, simmer for 10 mins.
- Remove half the vegetables and place in separate bowl. Blend the remaining contents of the pan and then return the reserved vegetables.
- Add in the green beans and seasoning to taste and simmer for a further 5 mins.
- Garnish with coriander and serve.
