Tabbouleh
This is a cold side dish that sits perfectly with grilled meat or fish. It has a refreshing flavour and acts as great slow release energy for fuelling your workouts. The prep for this dish is so easy that’s it’s little effort for a lot of reward. It will keep in the fridge for a few days and so it’s a useful quick feed. It’s a real winner.
Ingredients
- 120g Bulgur Wheat (available in major supermarkets and health shops)
- 2x lemons peeled and pips removed
- 1x fistful of spring onions
- 1x fistful of fresh mint
- 1x fistful of fresh flat leaf parsley
- 1/2 cucumber
- (Optional) 1-2 red chillies if you like it with a kick
- 3 glugs of olive oil
- Salt and pepper to taste
Directions
- Boil the kettle. Put the bulgur wheat into a large bowl and cover with boiling water. Leave this for 30 mins until the bulgur wheat has swollen and then sieve and drain.
- (Whilst the grain is soaking). Place all of the other fresh ingredients including the oil into a blender or food processor on a medium / low speed. Blitz it all up until it is coarsely chopped.
- Combine the chopped ingredients with the grain whist it is still warm and moist so that it takes up the flavour.add salt and pepper to taste. Leave to cool and then chill, serve when your ready.
