Banana & Coconut Loaf
This recipe was passed on to me from a cliens of mine – Helen. It lay un-touched for a while as one of the key ingredients (coconut flour) was more difficult to come by than I imagined. You can purchase coconut flour from specialist health food stores and asian supermarkets. This loaf is very low in sugar as the only sugar it contains comes from the bananas.
Ingredients
- 4 very ripe mashed bananas (if using bananas that are not very ripe add 1/3 cup of maple syrup to mixture for sweetness)
- 1/3 cup of melted coconut oil
- 4 eggs
- 1 tsp vanilla extract
- 1 1/2 tsp of cinnamon
- 1/2 cup of coconut flour
- 1 heaped tsp baking powder
- Pinch of salt
- Optional extras: 1/3 cup of dark chocolate chips, roughly chopped chocolate, any nuts of choice, raisins etc
Directions
- Preheat the oven to 350 F, 180 C, or Gas Mark 4.
- All ingredients go in a bowl together and mix well until combined.
- Lightly grease a loaf tin with coconut oil.
- Pour mixture in to the loaf tin.
- Bake for 45 minutes or until centre is set and the top is golden brown.
